
I was brought up with "tea time" which meant making a pot of tea (Darjeeling / Asaam blend) and taking a break. If this took place at my Granny's then there was also some kind of cake or bisquit involved. But it meant taking a break from what you were doing around three in the afternoon, sitting around the kitchen table, in the living room and having a chat.
There are times when I am overwhelmed by what needs to be accomplished, sad news or just don't know what to do next. When "first things first" is called for I make a pot of tea, sit down and breathe. If a friend comes to the door, I put the kettle on, and still, as my Mum drives across the country to come visit with her grandchildren she calls when she is kettle boiling distance as cries "put the tea on".
I was brought up on black tea which is rich with history, full of depth of flavor and soothing. But it also contains caffeine and tannins and can be drunk in excess leaving me feel jittery and dehydrated. There are times when only a good cup of black tea will do but I have taken to drinking herbal tea infusions. Herbal tea can be drunk at any time of the day and for any occasion. Drink it for health, pleasure or both. It is caffeine-free, full of nutrients and hydrating.
I believe in using organic herbs and ingredients. It is my belief that an excellent cup of herbal tea is made only from herbs of an exceptional quality. This also means not pulverizing the herbs and shoving them into a paper bag. The beauty of the blends and their fresh smell is a part of the ritual and enjoyment of my blends. I want you to have a sensory experience as you take precious time out to sit down and breathe.
Drink good teas, eat good food.
